Only thing we capture is the anonymized ID Apple generates on your behalf using Sign-In with Apple, as well as your time zone and country.
Time zone and country data is used to understand where our users are from so we can better serve you in the job hunt. There is also some product telemetry we collect, but, again, it's to help better serve you and it's all anonymized.
If you open a support case or join the wait list, we do ask for your email address then. But once we are done, we delete your information. We have an in-app support case system planned, which will negate this need, but... you can always give us a burner email account?
